Guanciale & Bufala Burger
A fusion burger bridging Brussels and Italy: buffalo burrata, guanciale, Brussels sprout cream, and confit tomatoes. A timeless comfort food reimagined as a cross-cultural encounter, with original contrasts.
Ingredients (for 3 burgers)
- 3 Burger buns
- 3 Hamburgers
- Buffalo burrata (120 g)
- 10 Brussels sprouts
- Fresh spinach leaves
- 10 Cherry tomatoes
- Chickpeas (30 g)
- Shallots
- Guanciale (50 g)
- Garlic (1 clove)
- Extra Virgin Olive Oil
- Butter
- Salt
- Brown sugar
Preparations
The hamburger is composed by stacking several preparations to be separately prepared in advance.
Guanciale
- Cook the guanciale in a small pan until crisp. Separate the rendered fat from the crispy meat; set the fat aside for the cream.
- Finely chop the crispy guanciale to create a coarse guanciale dust.
Brussels Sprouts Cream
- In a pan, melt a knob of butter with a splash of olive oil over medium-low heat. Add cleaned Brussels sprouts and sliced shallots, cooking until softened.
- Add chickpeas and the reserved guanciale fat to the pan. Season with salt, add half a cup of water, and simmer until the water evaporates.
- Once cooled slightly, blend at high speed until smooth. Fold in half of the guanciale dust while the cream is still warm. Note: Use sparingly, as the robust flavor can easily overwhelm other ingredients.
Burrata
Place the burrata (in its own liquid) in a bowl of warm water for 5 minutes to gently temper the cheese.
Confit Tomatoes
Heat olive oil with a garlic clove in a pan. Place halved cherry tomatoes cut-side down. Sprinkle with brown sugar and cook until caramelized. Season with salt.
Burger Patty
Cook the patty over medium-high heat to your preferred level of doneness.
Burger Buns
Lightly butter the cut sides of the buns and toast in a hot pan until golden brown to create a protective, flavorful seal.
Assembly
- Spread a measured layer of Brussels sprout cream on the bottom bun.
- Place fresh, dried spinach leaves over the cream, followed by the patty.
- Top the patty with pieces of burrata, the confit tomatoes, and a dusting of the remaining crispy guanciale. Close the burger and serve.
