Omelette Baveuse
Classic French omelette cooked “baveuse”: soft, lightly set curds with a moist interior. Controlled heat and continuous movement ensure a delicate texture and a clean, rolled finish.
Ingredients (for 1 omelette)
- 3 Eggs
- Butter
- Salt
- Whole Milk
- Chives (optional)
Preparation
- Crack the eggs into a bowl, add a small amount of milk and fine salt (dose proportionally to the number of yolks).
- Beat until homogeneous and let rest for 2 minutes.
- Melt a knob of butter in a non-stick pan over medium heat.
- Once the butter is hot, pour in the egg mixture.
- Do not allow the mixture to set as a uniform layer: continuously stir and break it up, redistributing it across the pan to form soft curds.
- As the eggs begin to lightly set, gather the mass toward the side of the pan opposite the handle, keeping it detached from the edges.
- Using a short, controlled wrist motion, roll the omelette onto itself with the help of the pan’s edge. A spatula can assist if needed.
- Slide the omelette gently onto a plate; assist with a spatula if necessary.
- Optionally finish with freshly cut chives sprinkled on top to balance the richness and add a fresh, green note.
